Southern Mexico is the ancient home of both chocolate and corn, as well as the practice of growing squash, beans and corn together in a harmonious balance known as la milpa. We named the coffee we purchase from the Productores Indígenas de la Sierra Chiapaneca (PROISCH) cooperative after this technique of traditional, sustainable agriculture still practiced by the small-scale organic coffee farmers on their land.
